Cheesy Beef Enchiladas
These cheesy beef enchiladas are a family favorite. Smothered in a flavorful red sauce and topped with plenty of melted cheese, they're guaranteed to satisfy.

Ingredients
- ✓2 lbs ground beef
- ✓1 medium onion, diced
- ✓3 cloves garlic, minced
- ✓1 tbsp chili powder
- ✓2 tsp ground cumin
- ✓1 tsp dried oregano
- ✓1/2 tsp salt
- ✓1/4 tsp black pepper
- ✓2 cans (10 oz each) red enchilada sauce
- ✓12 large flour tortillas
- ✓3 cups shredded Mexican blend cheese
- ✓1/4 cup chopped fresh cilantro
- ✓Sour cream for serving

Preheat oven to 375°F (190°C).

In a large skillet over medium heat, cook ground beef and onion until meat is no longer pink, about 6-8 minutes. Drain excess fat.

Add garlic, chili powder, cumin, oregano, salt, and pepper. Cook 1-2 minutes until fragrant.

Spread 1/2 cup of enchilada sauce in the bottom of a 9x13 inch baking dish.

Fill each tortilla with about 1/4 cup of beef mixture and 2 tablespoons of cheese. Roll up tightly and place seam side down in the baking dish.

Pour remaining enchilada sauce over the tortillas and sprinkle with remaining cheese.

Cover with aluminum foil and bake for 20 minutes. Uncover and bake 10 more minutes until cheese is bubbly.

Garnish with chopped cilantro and serve with sour cream.
