Ingredients
- ✓8 corn tortillas
- ✓2 tbsp vegetable oil, plus more for frying eggs
- ✓8 large eggs
- ✓1 can (15 oz) black beans, rinsed and drained
- ✓1 tsp ground cumin
- ✓1/2 tsp chili powder
- ✓For the salsa: 4 tomatoes, diced
- ✓1/2 onion, finely chopped
- ✓1 jalapeño, seeded and minced
- ✓2 cloves garlic, minced
- ✓1/4 cup chopped fresh cilantro
- ✓1 lime, juiced
- ✓Salt and pepper to taste
- ✓1 avocado, sliced
- ✓1/4 cup crumbled cotija or feta cheese

Make the salsa by combining diced tomatoes, onion, jalapeño, garlic, cilantro, lime juice, salt, and pepper in a bowl. Set aside.

In a small saucepan, heat black beans with cumin and chili powder. Keep warm.

Heat a large skillet over medium-high heat and lightly brush with oil. Warm tortillas one at a time, about 30 seconds per side, until slightly crispy. Transfer to plates.

In the same skillet, add more oil if needed. Fry eggs to desired doneness (sunny-side up is traditional).

Assemble by placing 2 tortillas on each plate. Top each tortilla with warm black beans, a fried egg, and salsa.

Garnish with avocado slices and sprinkle with cheese before serving.
