Ingredients
- ✓2 cups long-grain white rice
- ✓3 tbsp vegetable oil
- ✓4 cloves garlic, minced
- ✓1/2 medium onion, finely chopped
- ✓1 can (8 oz) tomato sauce
- ✓3 1/2 cups chicken broth
- ✓1 carrot, diced small
- ✓1/2 cup frozen peas
- ✓1 tsp salt
- ✓1/2 tsp cumin
- ✓1/4 cup chopped fresh cilantro

Rinse rice under cold water until water runs clear. Drain well.

In a large saucepan over medium heat, heat oil. Add rice and sauté until lightly golden, about 5 minutes.

Add garlic and onion, sauté for 2 minutes until fragrant.

Stir in tomato sauce and cook for 1 minute.

Add chicken broth, carrots, peas, salt, and cumin. Bring to a boil.

Reduce heat to low, cover, and simmer for 20 minutes or until rice is tender and liquid is absorbed.
